Foodie Fridays: Chicken Chilaquiles


I'm back again participating in the Geeky Blogger Book Blog's new Foodie Friday's meme.  She started this meme to combine her two faves--books and cooking.  Seeing as how I share those loves AND cooking decreases my stress, I couldn't contain my excitement.  I could kill two birds with one stone. It will be the perfect addition to Reflections of a Bookaholic as other content will slow and I can document the cooking I will do as I attempt to decrease the stress of bar prep.

Chicken Chilaquiles

Ingredients


Makes 4 servings (I made mine into 8)


2 cups shredded skinless, boneless rotisserie chicken breast
1/2 cup chopped green onions
1/2 cup (2 ounces) shredded Monterey Jack cheese with jalapeƱo peppers, divided 2 tablespoons grated Parmesan cheese
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup 1% low-fat milk
1/4 cup chopped fresh cilantro
1 (11-ounce) can tomatillos, drained
1 (4.5-ounce) can chopped green chiles, drained
12 (6-inch) corn tortillas

My Review:

This recipe was very easy to make but I wouldn't say that it was quick.

I loved... the unique taste that the tomatillos gave.  I had a difficult time finding them in the grocery store, but I eventually came across a can of crushed tomatillos on the same aisle as enchilada sauce but nowhere near it.

I loved... that this was a pretty filling dinner and still super healthy.  I didn't pair them with anything but I should have added some veggies (trying to be a healthier me).  The recipe says that this is 4 servings but I made mine into 8.  It seemed like a lot of food.

I liked... this dish but the chicken was a bit dry for my tastes.  I did use a boneless rotisserie chicken but I should have used dark meat instead of white because dark meat tends to be more moist and appropriate for double cooking.

If you can find the tomatillos, I'd give this one a try.  It is very difficult to replace tomatillos so any substitution would substantially change the recipe.  I like my healthy food to taste decadent, like I've tricked the calorie monster or something, but this one didn't.  If you are a completely realistic person, you'll love this one.  If you live in an imaginary world where chocolate is on your healthy food list, this one might just be a "like" for you.

  2. Oh right on. Sounds yummy and I love your honest feedback.

    What do you think of subbing a green tomato for a tomatillo? Do you think the taste would be similar enough? It has the same tartness.

    1. I think a green tomato works perfectly here. I'm just not sure how the measurements would work but that isn't too big of a problem.

  3. YUM! That actually sounds delish but I agree when a recipe calls for "t" you really can't sub without changing the recipe. In about a month you will see all healthy recipes from me too :) I did enough baking this past week to make a month worth of post but my day-to-day cooking much more "everyday" eats :)

  6. Oh, I ADORE chilaquiles! In fact, I introduced them to my mom the other day when we went out to lunch. She was not a fan...which means more for me. :) I'll see if I can work on the dry chicken problem in this one, and I'll let you know if I'm successful.
